Animals fed a high cow fat diet had a significantly higher incidence of Barrett's esophagus and Barrett's dysplasia than those in the low soybean oil group.
The incidence of Esophageal adenocarcinoma (EAC) was also slightly higher in the high cow fat group than in the low soybean oil group. High amounts of animal fat in the diet altered bile acid composition and increased the concentration of taurine conjugates in bile. These increased bile acids promoted the development of Barrett's esophagus and Barrett's dysplasia, resulting in Esophageal adenocarcinoma (EAC)
