In the 1970s, the safety of carrageenan (CGN) types was brought into question. During this time, studies utilized CGN to induce inflammation in animal models. It specifically induces edema in hind paw of the rat as an assay for antiinflammatory drugs (). In rodents, CGN exposure led to ulcerative lesions that were similar to human ulcerative colitis (). However, it is important to note that the CGN used in these studies was a degraded form known as poligeenan.
