Recent studies have explored the starch-degrading mechanism of Ruminococcus bromii. This bacterium has a distinctive arrangement of extracellular amylases, organized into structures known as amylosomes. Within this system, Sas20 functions as a highly adaptable starch-binding protein. The amylosome protein Sas6 from Ruminococcus bromii is capable of binding both single and double helical alfa-glucan structures found in starch. Additionally, the GH13_36 amylases from Ruminococcus bromii are specifically tailored to boost the production of maltose.
